  1. Take the mushrooms and wash carefully (1) under water, dry and place on cutting board. Cut into slices (2) thick about 2 or 3 millimeters, then put them in the saucer (3) apart.
  2. Take the turkey breasts and place on cutting board. With the large knife open them (4) by cutting first half thickness at the center and then along the thickness to decrease to half (5). Then cut into small steak and put them on a plate (6) apart.
  3. Now cut the onion into slices (7) and place it on a saucer. Then put a sheet of baking paper on the bottom of a casserole and place above the turkey breasts (8) well separated. So put on your breasts even half the slices of onion (9) that you had cut.
  4. To finish preparing in the casserole add salt (10) at your will, and then seasoning on the breasts also the rosemary (11). Then pour a drizzle of extra virgin olive oil to keep them from drying out. Now we just need to bake (12) the casserole in a preheated oven at 180° C for about half an hour to cook well the breasts.
  5. Now pour five tablespoons of extra virgin olive oil (13) in a medium sized saucepan, let it heat and then also add the onion (14) frying, until it becomes transparent. Then also add the mushrooms (15) and started to cook them.
  6. Continue to cook the mushrooms for about 15 minutes (16), season with salt and pepper (17) at your will with freshly ground pepper. Once to a few minutes from the end of cooking, add the breadcrumbs also (18). Stir well to mix everything a few minutes and then turn off the heat.
  7. Finally put the mushrooms on a plate (19) and then the baked breasts. Remove the rosemary (20) from the breasts and then add the mushrooms on top of them (21). Serve and serve immediately on the table piping hot.
