  1. Cut the lemons in a half (1) and then squeeze them (2) with the juicer. Leave all the juice aside (3).
  2. Wash the celery and put it on the chopping board. Cut it horizontally into three strips (4). Then chop the strips (5) well and put everything apart in a saucer (6).
  3. Peel the garlic cloves (7) and then crush them (8) with the knife. Put it in a large bowl (9).
  4. Add the chopped celery (10), the lemon juice (11) and the white wine (12) into the bowl.
  5. Add five tablespoons of extra virgin olive oil (13), dried thyme (14) and dried rosemary (15).
  6. Add the freshly ground black pepper (16), and a pinch of salt (17). Mix well (18) with a fork.
  7. Take the chicken and put it on the cutting board. With the large meat knife, open the chicken (19) exactly in half. In case it needs, remove the internal parts. Then crush it well (20) with your hands and break, in case, the sternum, so that it remains well open. Finally put it in the bowl (21) to marinate.
  8. Then put the bowl in the fridge (22) for at least an hour. After this time, turn the chicken (23) to marinate the other side. Leave in the fridge for at least another hour, before putt the chicken in a colander (24). Do not throw away the marinade liquid.
  9. When the chicken is drained, prepare the grill. Pour the water onto the bottom (25) and then turn on the grill at maximum power. Once hot, place the chicken (26) on top, with the open side facing up. Finally add salt (27) and cook this side for at least 20 minutes.
  10. While grilling, pour a little bit of marinating liquid onto the chicken (28). Then turn the chicken on the other side (29), and continue pouring the marinating liquid (30), while cooking for another 20 minutes. The cooking time also depends on the power of the grill. Evaluate it by checking the meat with an incision.
  11. Once the chicken has cooked, remove it from the grill (31) and place it on the cutting board. Then cut it into pieces (32) and serve it (33) still hot on table.
