ROAST WITH POTATOES

The recipe that we want to propose today is a roast, a very substantial meat dish, which you can easily make at home, with the addition of genuine ingredients.
Roast with potatoes is a typical dish of Italy, with numerous recipes, all different according to the culinary traditions of each region. Roast is an ideal dish to serve with a good red wine with fruity flavors.
We chose the potatoes because they are the perfect vegetables for meat. If you like it, you can accompany the roast with a mixed salad or other cooked vegetables. We recommend eating this dish once a week, because it is very caloric and substantial.

  1. Place the garlic clove previously peeled over a cutting board (1), then chop it (2) and leave aside (3).
  2. Now pour three tablespoons of extra virgin olive oil into the mortar container (4) and then add the chopped garlic (5) and adjust salt to your liking (6).
  3. Now, sprinkle with black pepper (7) and then start to crush the ingredients energetically (8). Leave aside (9).
  4. Now place the roast pork over a chopping board (10), and with a brush, soak the bristles in the sauce (11) and then brush the meat thoroughly (12). Once done, leave aside.
  5. Take the potatoes and peel them (13). Start slicing the vegetable not too finely (14) and then place the potatoes inside a large round baking tray (15).
  6. Add three tablespoons of extra virgin olive oil (16) over the potatoes, then add salt (17) and mix thoroughly with a spoon (18).
  7. Bake the potatoes in a preheated oven at 180 degrees for thirty minutes (19). After the first 15 minutes of cooking, stir the potatoes (20) and bake again for another fifteen minutes (21).
  8. Take off the potatoes and make some space in the center of the tray (22), then place the meat there (23). Cook in a preheated oven at 180 degrees (24).
  9. After the first thirty minutes of cooking, turn the meat on the other side (25), then continue to cook for another thirty minutes (26). Once well cooked, take off the roast (27) and serve still hot.
