  1. Prepare a quick sauce as the basis of the recipe. Chop finely the onion (1), the garlic (2), and then the parsley (3).
  2. Then put 3 tablespoons of extra virgin olive oil (4) to heat in a large clay pot. Place chopped herbs to fry for a few minutes (5) and in the meantime cut the squid into strips (6), taking care to deprive them of the beak.
  3. Once made transparent the onion, put to cook the squids (7), stirring well to flavor, then add salt and pepper (8). Let go a few minutes and then add the white wine (9), cover with a lid and simmer five minutes.
  4. After five minutes, if you have chosen the solution of fresh peas, add them to the pot (10). If you have chosen the solution of frozen peas wait a few more minutes, because generally this is the most tender and cooked with 5-10 minutes early. Once you put the peas also add tomato sauce (11), stir well and let it finish cooking (12). The total cooking time of the squid is about 20-25 minutes, while that of peas depends on your choice. The fresh peas need about 20 minutes, while frozen those of 10 minutes. Adjust the recipe of salt and pepper. So serve still warm or let stand. This cold dish is also delicious.
