The apricot jam tart is perhaps the most classic of fruit tarts, easy to make for your children who adore this recipe for a snack.
Excellent with cold milk for the morning for breakfast and with coffee for adults. To make the tart you will still need time because the dough must be worked and in any case will then have to rest a few hours before being cooked. As for the filling instead you can use a good jam commercially available.
Instructions
- Start the recipe putting the flour in a bowl (1). Then take the butter and cut into small pieces (2) and then add it to the flour (3).
- Now take a first stir (4) with the mixer to mix flour and butter, then add the sugar (5). Then grated lemon rind (6) and place it in a saucer.
- Then break the eggs and keep only the yolks (7) by putting them in a glass. Then add the lemon zest (8) to the mixture and pour into a flat plate (9).
- Add the eggs (10) to the mixture and start mixing and kneading (11) with your hands, bringing the ingredients from the bottom toward the center. If the dough becomes too strong and very elastic, add a little water (12) and continue to knead for about 15 minutes.
- Once you have a good, elastic and dense dough (13), wrap it in kitchen plastic wrap (14) and store in the refrigerator (15) for at least two hours.
- Once rested take the dough from the refrigerator, discard it and cut away about ¼ (16) to use the biggest part. So take a low pan for pies and wet the bottom with a trickle of water on which then will place a sheet of baking paper (17). In this way it will adhere without slipping so as to facilitate your task, while the water then evaporate in the oven. So place above the largest dough (18).
- Now with his hands started to expand the dough (19) and roll it out until you get to the edges (20). Make high sides of one centimeter to contain the jam of which you will make a layer of a few millimeters (21) covering well the entire base.
- Now take the smallest part of the dough and cut into many strips (22) that you will need to roll like a long cigar (23), squashing them slightly and tape. Finish off the dough and let the various cigars on the cutting board (24).
- Now take the strips of dough and started to place them on the tart (25) at a distance equal, first vertically and then horizontally (26) so as to form a kind of net (27).
- If there is some dough more, make as balls to be put at the center of the squares (28) as decoration. Now we just need to bake (29) in a preheated oven at 160°C for about 40 minutes. Once cooked, take out (30) the tart and let cool before serving.
