The apple and mascarpone cheese tart is tasty and easy to prepare. It is a very creamy tart which is prepared with the pastry cream and the same cream used for the tiramisu. A touch of cinnamon adds spiciness to the tart.
Instructions
- Put 3 egg yolks (1) in a mixer and then add the rum, the vanilla (2) and all the butter (3) with a pinch of salt.
- Now also add the sugar (4), and then the flour (5) passed through a sieve. With electric mixer, by the beaters for dough, begin to mix the ingredients (6).
- Once well blended the ingredients work the pastry with hands (7) so as to obtain a smooth and soft block (8). Then store it in the fridge (9).
- Starting to separate the yolks from the whites. Put the three egg yolks (10) in a bowl and add also sugar (11) and then whip (12) with the electric mixer.
- Separately, in a small bowl, whip the egg whites (13) with electric mixer. Once ready, add the mascarpone cheese (14) to the whipped yolks and mix well with electric mixer and then also add the egg whites (15) beaten until stiff. Work the cream a few minutes with electric mixer to obtain a homogeneous mixture.
- Now take the apples, peel them (16) and then cut into slices (17) fine enough. Then squeeze the lemon and pour the juice (18) on the apples to prevent them from oxidation.
- So take the pastry from the fridge, place on a large sheet of baking paper (19) and roll it out well to make it a few millimeters thick disk with a diameter a little greater than the cake tray you use to bake. So take all the sheet with the pastry over and place it on the baking tray (20) making sure it fits snugly on the bottom and sides. Cut away the excess of edges and shaped well the pastry (21) into the tray.
- So take a ladle and use it to fill the pastry with cream (22). When you have filled all the cream on the tart. begin to dispose over the apple slices (23) arranging them in a circle, until it fills the entire surface (24).
- Now sprinkle the surface of the tart with the cinnamon powder (25), passing it through a sieve, then bake (26) in a preheated oven at 200° C for about half an hour. Once past this time check the consistency of the pastry which should be ready, then take out (27), let cool and put into the fridge for at least two hours before serving.
