Baked cauliflower is a perfect side dish for game meat, not too structured. Taste is marked but delicate and it should be the best for this match, as well as some fish that pair well with the bitter taste of cauliflower. Join it however also a good steak, maybe with a little raw olive oil.

- 300 g cauliflower
- 30 g Provolone smoked cheese
- 5 tbsn bread crumbs
- 3 tbsn Flour
- 5 g Butter
- 2 sprigs thyme
- 5 tbsn olive oil extra virgin
- 1 fistful salt

Instructions
- Take the cauliflower and cut away the leaves (1) and hard shank. Then put a pan of salted water on the fire and when it starts to boil put inside the cauliflower (2) to boil for about 10 minutes (3). Once boiled, drain in a colander and keep a cup of cooking water.
- While the cauliflower is boiling, prepare the other ingredients. Grate the Provolone cheese (4), then detach the thyme leaves from twigs and put them on a saucer (5). Then grate the bread (6) if you do not have bought the ready one.
- In a small bowl pour five tablespoons of extra virgin olive oil (7), and add a pinch of salt. Then add the thyme leaves (8) and three tablespoons of flour (9).
- Now take a ladle of hot cooking water used for the cauliflower (10) and pour it into the little bowl with the flour and oil (11). Then started to mix well to obtain a smooth cream (12).
- Now take the butter and grease well the bottom of a casserole (13) and then cut and divide the cauliflower (14) on a cutting board. Then place them in the casserole (15).
- Now sprinkle in the cauliflower the grated provolone (16) and pour also the cream (17), spreading it evenly. Then sprinkle over the breadcrumbs (18). Now bake the casserole in a preheated oven at 180° C for about 20 minutes, so as to obtain the crust on the surface, then serve immediately at table piping hot.
