    The lasagna is a typical dish of Italy with many traditional recipes in all regions. Today we are proposing a version with peppers, a very delicate taste with a sweetish aftertaste. You can vary the recipe by replacing the mozzarella with the Besciamella sauce made in house, or add other vegetables to enrich it. This dish is ideal as a first course for the Sunday lunch, or to do to enjoy a dinner with friends, accompanied by a good white wine with fruity flavors.

    Instructions
    1. Put the vegetable on a cutting board and with a knife divide it in half (1). Then eliminate all plant parts that are inside (2) and finely slice it into strips (3).
    2. Once shredded into strips, wash thoroughly under water (4) and then add salt to the boiling water into a pot (5). After this step, place in the water the peppers strips (6), stirring with a wooden spoon. Cook the vegetable for about ten minutes on medium heat, and when ready, drain and place the strips in a bowl.

    3. Now place the mozzarella on a clean cutting board (7) and initially to divide slices not too thin, after in strips and finally in dices (8). This step is complete, left aside in a saucer (9).
    4. Now pour a tablespoon of extra virgin olive oil in the saucepan full of water that you have previously put on fire (10) and add in the sheets of dried lasagna (11). Cook for about ten minutes or as indicated on the packaging. Once the pasta will be ready, transfer it from the pot in a bowl with the aid of a wire net. Remember to soak up the water of the pasta, on a clean cloth (12), on both sides.

    5. Pour a tablespoon of olive oil extra virgin olive oil on the bottom of a rectangular baking tray (13), and start placing the first sheet of lasagna (14). Add over the strips of peppers (15).
    6. Now put black olives over peppers (16) and then the diced mozzarella (17). Now add salt (18).

    7. Now repeat the same operations putting another sheet of lasagna on top (19) and add all the ingredients available. Finish with the last sheet of lasagna, garnish it on top with the diced mozzarella (20) and put the tray to cook in a preheated oven at 150° C for about thirty minutes (21). Once cooked, take out the lasagna, and serve hot on table, accompanying the dish of good fruity white wine.
