    The pizza is a typical dish of Italy with different recipes and seasonings according to regions and culinary traditions.

    Like for the other recipes of pizza, we add the milk in the ingredients. This is because the domestic oven we have in our houses, are not so powerful like the professional one in pizzeria. The cooking is longer, and with the milk (not used in a professional pizzeria), we can keep the pizza or the focaccia soft, avoiding the risk to have a food dry and overcoocked. If you have at home a professional oven for pizza, do not use milk as ingredient.

    With this article we describe the pizza with potatoes, with delicate taste and sweetish aftertaste, to accompany with a cold beer.

    You can vary the recipe, this dish by adding other vegetables, such as zucchini and peppers, or replace the fresh mozzarella, with the fontina cheese or melted cheese.

    Instructions
    1. First, dissolve the yeast in warm water for pizza (1) and stir well. Pour the flour in a bowl and add four tablespoons of extra virgin olive oil (2) and the yeast dissolved in water. Add salt at your will. Then, start to knead with your hands up to have a smooth and homogeneous dough (3). After left aside and do rise for about 5 hours, until the dough will be doubled in volume.

    2. Take the potatoes and place them on a cutting board to peel finely and then slice it (4) and put the slices to boil in a pot with hot water (5) for about ten minutes. Once done, drain in a colander and let it aside on a plate (6).
    3. Now place the fresh mozzarella cheese on a cutting board (7) and initially divide it into slices, then into strips and finally into small pieces (8). Then leave apart on a plate (9).
    4. Pour three tablespoons of extra virgin olive oil in a round baking tray and place on the dough (10). With the palm of your hands, roll out the dough until it covers the entire bottom of the pan (11). Once the dough is rolled out, add the potatoes sliced (12).

    5. Now, pour over the potatoes a tablespoon of extra virgin olive oil (13), after add salt at your will (14) and sprinkle with black pepper (15). Then add the dried rosemary.
    6. Now put to cook the pizza in preheated oven at 150°C for about 30 minutes (16) and then take out from the oven and add the diced of mozzarella (17). Bake again for about 10 minutes, up to the mozzarella is will not completely melted (18). Take out from oven and serve piping hot table, accompanying the dish with a good cold beer.
