    The Italian crostata (cobbler) is certainly one of the easiest and cooked cakes in Italy, much loved by adults and children, excellent on many occasions and great classic snack for the family. With the same base you can be prepared pies with different tastes, such as the plum jam, to spread on the base.

    The tart is made with a simple pastry of flour, eggs, butter and sugar, then let it rest a few hours. So start it much in advance, even if wanting you to prepare the dough the night before and also complete the tart the day after.

    1. Start the preparation by sifting the flour in a container (1) and cutting the butter in cubes (2) to join them in the container with flour (3).

    2. Begin to knead coarsely (4) with the mixer to mix the flour and butter before joining also sugar (5). Then grate the lemon rind (6) after washing it well.

    3. Break the eggs into a bowl, throwing away the whites parts and keeping only the yolks (7), apart in a glass. Meanwhile, put the lemon zest (8) in the dough that you will put on a dinner plate (9).

    4. Add the egg yolks (10) in the dough and begin to knead it (11) with energy, bringing the flour from the bottom towards the center. Knead for about fifteen minutes, adding a bit of water (12) if the mixture becomes too dry.

    5. After mixing for about 15 minutes, the dough should be compact and elastic (13). Take the kitchen plastic wrap and wrap the dough (14) that you will need to rest in the refrigerator (15) for more than two hours.

    6. After the rest time for the dough, take and divide it into two parts, one large and the other small, approximately a quarter of the total (16). Take the pan and grease with butter the bottom (17). Then place on the largest part of dough (18).
    7. Now the dough need be widened and stretched with hands (19) to roll out the dough and create the base (20). This must also have high edges of a centimeter (21) so that the jam does not come out from the tart.

    8. The smallest part of the dough is to create the strips (22) to roll (23) with your hands to get a cigar-shaped. Then mash them a bit. Now take the plum jam and spread it on the base, covering all with a layer of two millimeters (24).
    9. Now place the strips of dough on the tart, forming a kind of grid (25). Then bake (26) in a preheated oven at 160°C for 40 minutes and once cooked, take out from the oven (27) making it cool before eating.
