Quinoa with mushrooms is a perfect recipe for vegan diet, but also for any diet rich in proteins and poor in fat, light but really nutritious. The quinoa is a herbaceous plant of the family of the Chenopodiaceae, which has origin in South America. It is a highly protein and very digestible food. Its flavor is particularly delicate, and this characteristic let this food a perfect combination with a lot of vegetables. Quinoa is also very healthy, because rich in phosphorus, zinc, iron and magnesium.

- 160 g Quinoa
- 200 g Mushrooms Champignon
- 1 clove garlic
- 1 pinch salt
- 1 sprinkle Black pepper
- 1 pinch chilli pepper powder
- 4 tbsp olive oil extra virgin

Instructions
- Place the mushrooms on a cutting board (1), then peel them with a knife (2), and slice not too thin (3). Leave aside.
- In a medium-sized frying pan, pour three large spoons of extra-virgin olive oil (4), warm it and add the clove of garlic after peeling (5). Let fry over a moderate flame for a few minutes, then add the also the slices of mushrooms (6).
- Add some salt (7) and sprinkle with freshly ground black pepper (8). Then add the chilli powder (9).
- Mix well (10) and let cook the mushrooms for about 20 minutes, covering with a lid (11), then eliminate the clove of garlic (12).
- In the meantime, put a pot plenty of water to boil, and then add the quinoa (13), stir and cover the pot with the lid (14). Let cook for the time indicated on the package and once cooked, drain the quinoa (15).
- Add the quinoa in the pan with the mushrooms (16) and stir (17) to mix well. Serve the dish still warm (18) on the table.
