    1. As first put a large pan of salted water (1) to heat and once boiling soak the potatoes (2) unpeeled and boil for 40 minutes. Once ready, drain (3) and let cool.

    2. Take the cutting board and roll out prosciutto starting to cut it into strips (4). Once cut all (5) put it aside on a plate (6).

    3. Take the Scamorza cheese and cut it before into slices (7) and then into cubes (8). Put it on a saucer apart (9).

    4. Then break the egg into a small bowl (10), add salt and pepper (11) and whip with a fork. Then add the diced smoked cheese (12) and set aside well blended.

    5. Once the potatoes are cold, place them one at a time on cutting board and cut off the top (13) by way of hat. So start with a spoon to empty the potato (14), removing all the interior (15) and leaving aside the pieces of potatoes to work separately them a bit with a fork.
    6. Then started to fill the bottom of the potato with the strips of ham (16). Then pour in the egg with the smoked cheese cubes (17) and then filled to the brim with potato worked with a fork (18).

    7. Now chop the basil (19) and put it on the potato (20). Grate the Parmesan in flakes and then put it over the basil (21).

    8. Once ready, place the potatoes in a casserole where you have put a sheet of baking paper (22). Then bake in oven (23) preheated at 200° C for about 20 minutes, forming a surface crust. Once ready, take out (24) and serve after ten minutes of rest.
