Today we propose a simple recipe to be made at home, with the addition of genuine ingredients that make the dish very tasty and rich in vitamins.
Vegetables soup is a perfect dish, to be served accompanied by good dry red wine. The vegetables we chose, it can easily buy them in any supermarket, or directly from a fruit and vegetable retailer.
If you want to complete the dish, we recommend adding some pasta for minestra or rice.
Instructions
- Place the leek on a chopping board (1), then cut it finely (2) and after completing this step, leave aside in saucer (3).
- Wash the zucchini under abundant water (4) and then cut it in slices not too finely (5). Leave aside in a saucer (6).
- Now wash the carrot under abundant water (7) and after cut it in thin slices (8). Finally leave aside in a plate (9).
- Peel the potato finely with the peeler (10), then cut it in dices thick a half centimeter (11). Once finished, leave the potatoes in a saucer (12).
- Now in a medium sized pot, add three tablespoons of extra virgin olive oil (13) and once well warm, add the leek previously worked leek (14) and the carrots (15). Let fry for about two minutes.
- Now add the potato in the pot (16) and mix carefully with a wooden ladle (17). Then pour a liter of water (18).
- Add the previously worked zucchini (19) and then also the canned peas (20). Add the salt at your liking (21). Stir and cover with a lid, and let cook at moderate flame for about forty minutes. Once the soup is ready, serve it hot on the table, accompanying it with a good dry red wine.
