    Today’s recipe is the preparation of a spicy pizza Diavola, made with simple ingredients that you can find in any supermarket. In this recipes we have made that one without tomato sauce.
    As everyone knows, Italy boasts numerous recipes for pizza, all different, according to the culinary traditions of each region. The pizza Diavola is a very tasty spicy aftertaste, this is why the name Diavola, which in Italian means evil.
    The main ingredient is the very spicy Italian salami, or you can use also a spicy Spanish Chorizo. It is ideal to be accompanied with some good fresh beer, to be proposed for both a family dinner, either with friends. An equal to 250 grams portion of this food, is the ideal quantity to be taken not more than once per week, recommended by nutrition experts. We do not recommend the consumption of this dish for those who suffer from gluten intolerance.

    Like for the other recipes of pizza, we add the milk in the ingredients. This is because the domestic oven we have in our houses, are not so powerful like the professional one in pizzeria. The cooking is longer, and with the milk (not used in a professional pizzeria), we can keep the pizza or the focaccia soft, avoiding the risk to have a food dry and overcoocked. If you have at home a professional oven for pizza, do not use milk as ingredient.

    Instructions
    1. Begin the recipe by taking a bowl to add in all the flour (1), following join the water at room temperature (2) and finally the fresh whole milk (3). After completing these steps also join the granulated sugar.

    2. Now melt the dry yeast for pizza in warm water and stir thoroughly with a spoon until the yeast will not be conferred to liquid classic light brown (4), after add it to the bowl with the other ingredients (5) and add three tablespoons of extra virgin olive oil (6).
    3. Now with hands started to knead the mixture vigorously from the bottom to the top (7), until you have not achieved a smooth homogeneous dough free of lumps. Continue giving to the dough the ball classical form (8), and after cover the mixture with a cotton kitchen cloth (9), leaving it in a leavening for a minimum of six hours, until the volume of the dough will not be doubled.

    4. Take a round baking pan, large, and add to the bottom an of extra virgin olive oil spoon (10), then put on the leavened dough and started to roll it out with the palms of hands (11), as long as it is not completely covered the bottom (12).
    5. At this point add salt to the dough (13), and add the Chorizo slices in a circular direction (14). Put then to cook in a preheated oven at 150 for about thirty minutes (15).

    6. After this time take out the pizza (16) to add the grated mozzarella (17). Bake again over low temperature until the mozzarella is melted completely, then remove from oven (18). Cut the pizza and serve hot to the table, accompanied by good fresh beer, if someone wants to use it.
