    1. Wash the cauliflower (1), cut in pieces (2) and leave aside. Then cut the bacon into strips (4), and put in a separate dish.

    2. Take a large frying pan and pour extra virgin olive oil (4). Once hot add the garlic (5) and let brown before add the bacon (6), turning it occasionally.
    3. Then add the cauliflower (7), salt (8) and finally sprinkle with fresh ground black pepper (9). Let cook for five minutes.

    4. Pour the white wine vinegar (10), stirring occasionally (11), then cover with the lid and cook for about 20 minutes (12).

    5. With the ladle, smash a bit the cauliflower (13) and cover with the lid for others 10 minutes (14). Finish to cook, stir the cauliflower (15) and serve still hot on the table or let cool for 20 minutes.
