Chicken croquettes, (as we call in Italy, crocchette di pollo) are a tasty white meat appetizer, easy to make and much loved by children who can eat chicken in a different way. It is a classic preparation with egg and breadcrumbs, very nutritious and excellent for any occasion, both for the family and for guests. They are also excellent as a main course for your children, perhaps accompanied by a salad of lettuce or in any case with fresh side dishes. Also good with sauces such as mayonnaise and ketchup.

CHICKEN NUGGETS (Chicken croquettes)
Instructions
Cut the chicken into dices (1) and then putting it in a container to blend it (2) or in the normal mixer until it is well reduced to a mince (3).
Then open an egg in a small bowl (4) and salt it lightly (5). Stir the egg to mix it (6).
Now lightly salt the chicken (7) and then pour it (8) into the egg. With the mix well (9) to obtain a homogeneous mixture. If you like, add a bit of fresh black pepper.
Now put the flour (10) in a plate and the breadcrumbs in another flat plate (11). Then open the other two eggs in another bowl (12) by adding a little salt. Mix well.
Now with a spoon take a part of the mixture of chicken and egg (13) and roll it up to make a meatball. Then pass it in flour, and then in the egg (14) and finally in breadcrumbs (15) to bread everything.
Now pour the sunflower oil into a large, non-stick pan and heat it well until it is very hot. Fry the croquettes (16) for a few minutes, turning them (17) to fry well on the other side for five minutes until they become brown. Once ready, remove them from the pan to put on a plate (18) where you will have lay some kitchen paper towels to absorb the oil. Serve immediately hot on table, with two slices of lemon, and a sprig of parsley to decorate.
