Plum cake is a quick recipe, an easy dessert to prepare in a few minutes. Once done, you need just bake in the oven for about 40 minutes. As cake is a not too sweet cake, perfect for those who love something different from a dessert, and it can be served in any season, even in summer.
It is perfect as snack to be served with a glass of cold milk, or as a classic dessert after dinner, when you can combine with a glass of sweet wine, like a Muscat.

- 400 g Plums fresh
- 250 g Flour for cakes
- 160 g Sugar white
- 100 ml Milk whole
- 3 egg
- 100 g Butter
- 3 ml vanilla liquid extract
- 10 g Cane sugar
- 1 sachet yeast
- 1 pinch icing sugar

Instructions
- Wash the plums (1), dry and divide them into two halves (2), to remove the stones (3).
- Cut the halves into thin slices (4) and leave aside in a bowl (5). Take the butter and melt it in a small saucepan (6) over low heat. Then turn off the heat and let it cool.
- Open the whole eggs (7) into a bowl. Add the white sugar (8) and then mix with the electric whisk (9).
- Sift part of the flour on the eggs (10), and also the yeast (11). Mix again with the electric whisk (12) and sift the rest of the flour while you going on to whisk.
- Pour the milk (13) at room temperature and mix again (14). Then pour also the melted butter (15).
- Pour the vanilla extract (16) and whisk (17) for the last time to have a thick cream. Then take a 24 cm cake pan to butter the bottom (18) and sides.
- Pour the dough into the cake pan (19), leveling the surface. Then begin to distribute the plum slices (20) following a geometrical drawing. Then sprinkle on it the brown sugar (21).
- Bake (22) in a preheated oven at 180°C for about 40 minutes. Do not open the oven during cooking, as this may result in leavening being interrupted. To check the cooking, after 40 minutes punch the cake with a toothpick. If it does not stick, take out the cake (23) and let it cool. Then remove it from the pan and sprinkle with icing sugar (24).
