Potatoes and green beans are a classic side of Roman cuisine, with oil, mint and garlic to enhance the taste of these vegetables. The preparation is very simple, as it is enough to boil both the potatoes and the green beans and let them flavor a few hours with the herbs chopped in oil and vinegar. Excellent with oily fish and white meat dishes.
To prepare the green beans with potatoes, you will need only a few ingredients. Very important will be the quality of potatoes and green beans, which I recommend buying from your dealer.

POTATOES AND GREEN BEANS
Instructions
First, peel the potatoes (1) and wash them. Cut them into slices (2) and leave aside. Wash the green beans and then remove the ends (3). Meanwhile, place a pot with plenty of salted water on the fire.
When the water starts to boil, immerse the potatoes (4). After 10 minutes add also the green beans (5) in order to have an almost equal cooking time. Boil for about 20 minutes more (6). However, check the cooking of both potatoes and green beans picking the vegetables with a fork.
Once cooked, dry the vegetables in a coriander (7). Then start the dressing. Peel and chop finely the garlic (8). Wash 5 or 6 large leaves of mint and dry them (9).
Finely chop the mint and place it in a medium salad bowl (10). Add also the chopped garlic (11) and sprinkle with fresh ground lack pepper. Add some salt and pour the olive oil (12).
Pour also the vinegar (13) and emulsify vigorously with a fork (14) before to add the vegetables (15). Mix well and let rest a few hours before serving as a side dish.
