    Mushrooms are one of the most delicious dishes for Italians, especially associated with pasta. There are many ways to cook them in seasoning, with cream, just wine or with classic tomato sauce. This recipe is probably the oldest of all, classic and Italian. Even here, the equipment and ingredients are the classic ones common in all houses, with herbs for a seasoned and tomato sauce. Great importance for the flavor of the dish is given by the quality of the mushrooms, which can completely change the taste of the sauce, making it more or less delicate.

    Instructions
    1. First wash the mushrooms (1) removing the earth. Then slice them (2) and leave aside (3).

    2. Then proceed with the classic preparation of the sauce, starting to chop the various herbs, that is onion (4), celery (5), carrot (6) and garlic.

    3. Then in a large pan pour five tablespoons of oil (7) to heat and then the onion (8) and all the herbs (9) to simmer on medium heat, until the onion begins to be brown.

    4. Once browned the onion, put the mushrooms (10) in the pan and start stir them. After a couple of minutes add the wine (11), keeping medium the fire, so that the mushrooms begin to cook (12) and season with the wine.
    5. After about 6-7 minutes of cooking mushrooms in the wine, add the tomato sauce (13), mixing well (14). Allow it to go with the lid on the frying pan for about 15 minutes (15).
    6. Meanwhile, the sauce is cooking, grate the Parmesan cheese (16) and chop the parsley (17). Leave aside on a plate (18). Before starting to prepare the saucepan put the water on the fire for the penne.

    7. Cook the pasta to match the cooking times with the sauce. Once cooked, drain and add the penne in the pan (19), stirring well (20). Mix and add Parmesan cheese (21) before serving, and serve still hot with a splash of parsley.
